Low fat vegetable soup.

This is a Weight Watchers recipe 🙂 you can add whatever vegetables you have..that’s what I do 🙂

Serves 4

400g can chopped tomatoes

2 carrots, chopped

an onion, chopped

2 courgettes, chopped

a vegetable stock cube

1 pint water

salt and pepper to taste

  1. Place all the ingredients in a saucepan
  2. Cover and cook until the vegetables are all soft. For a smooth soup, purée all the ingredients in a blender. For a chunky soup, just purée half the mixture.
  3. Return to the saucepan and heat through before serving.
