This is a Weight Watchers recipe 🙂 you can add whatever vegetables you have..that’s what I do 🙂
400g can chopped tomatoes
2 carrots, chopped
an onion, chopped
2 courgettes, chopped
a vegetable stock cube
1 pint water
salt and pepper to taste
- Place all the ingredients in a saucepan
- Cover and cook until the vegetables are all soft. For a smooth soup, purée all the ingredients in a blender. For a chunky soup, just purée half the mixture.
- Return to the saucepan and heat through before serving.
