Serves 4 – easily halved, doubled, quartered or whatever!
4 salad tomatoes
1 red onion
bunch spring onions
1/4 teaspoon sugar
1 teaspoon coriander leaf
Chop the tomatoes, red onion and spring onions into very small pieces. Put them in a bowl.
Add the sugar, coriander and a sprinkle of salt.
Mix everything together.
Serve as a side dish with just about anything!
